An employee just had a covered critical illness — what do I as employer do?

Very little. Voluntary critical illness claims are filed by the employee directly with the carrier, with supporting medical records. The employer's role is limited to confirming employment status. Cash benefits are paid directly to the employee within 1–4 weeks of approval. You may want to offer the employee general support (FMLA leave, disability claim coordination if relevant) but the voluntary benefit itself runs in parallel without your involvement.
